Love those nuts and seeds but ....
It is important to soak most of the nuts and seeds that we use so that the inhibitor enzymes are broken down and washed away. The soaking will also stimulate the breakdown of the nutrients to their simpler forms and make digestion easier. Remember that nuts contain a very high level of fat/oil and are therefore very calorie laden. A little and not too often must be a rule for these. The fat however is good fat but fat nevertheless.
Seeds on the other hand can be consumed in larger quantities - sunflower seeds sprinkled on a salad give a nice crunchy texture and added nutrients. Half fill a glass or china basin with the nuts/seeds and rinse well. Now fill the bowl to the top with water and leave it to soak. The time required will be described in each recipe as this varies and also depends on whether it is going to be sprouted afterwards.
Our menu plans are developed with the assistance of our Nutritionist, Mel, so that each day is balanced for protein, carbohydrate and fats, along with vitamins and minerals. We want to help make you as healthy as you can possibly be!
Most raw foodies do not need to worry about calories as they fill up on vegetables and don't eat high calorie meat, cheese or over-processed cooked foods.
